Some of the yummiest foods are not the prettiest 🤷🏼♀️ but this creamy chicken Dijon is incredible! If you’re looking for a new easy chicken recipe, this. is. it. 🤤 Slice three chicken breasts into strips (you can choose how large or small, I like it thin)
Cook in @chosenfoods
avocado oil, salt, pepper and garlic until about half way cooked.
In a bowl whisk together the following then add in with the chicken:
2 T Dijon mustard
1/2 c cashew milk
1 t garlic
2 t ground mustard seed
1/2 t onion powder
1 t fresh parsley
1/2 t tapioca starch
Salt and pepper to taste
Cover and finish cooking. Top with extra fresh parsley and extra sauce (I made a batch of the sauce in my @vitamix

We’re getting cooler nights here in Melbourne which means more ‘melt in your mouth’ moments like this lamb shank. Slow and easy to make, you probably already have the herb & spices in your pantry without realising it.

As we’re “hopping” into spring, this dish is full of warmth and comfort for those days that bring back a bite of cold. 🐰🌾🍽
To make this easy~to~throw together on a weeknight meal simply scoop a cup of farro, half of an onion thinly sliced, 2 cloves of garlic minced, 9 oz. of cherry tomatoes cut in half, 1 1/4 teaspoon kosher salt and a dash of red pepper flakes into a pot with 2 cups water. Bring to a boil then simmer uncovered for 30 to 35 mins. Meanwhile rinse, chop and sauté kale with some garlic, evoo, s & p, and I threw in a chopped red bell pepper (because it needed to be consumed). Top with basil and Parmesan (optional). 1/3 of our kids enjoyed it, but I think with time the other two will come around. It’s something I will definitely make again as the Mr. and I scrapped our bowls clean. / As I looked out my window, I saw a wild rabbit sitting outside my window. Welcome, spring! 🌿🌼☘️

Last nights endo friendly dinner.. Gluten free mushroom ravioli in home made tomato sauce and topped with vegan cheese! I wasn't sure if this was going to turn out or if the kids and I would like it but it was delicious and the kids asked for seconds with extra cheese! 💋
🍠Bare cupboard pasta 🍠
You know those days when you look in the fridge & cupboard and just hope that they miraculously refilled themselves? 😬
Dinner was made using ingredients that needed using up/were all I could lay my hands on. ⚡️sweet potato
⚡️mixed pasta (buckwheat & rigatoni)
I cooked the sweet potato then blitzed it with a couple of tbsps of nutritional yeast, and a couple of spoonfuls of the pasta water as it was nearing the end of cooking. I seasoned with s&p then set aside and threw a handful of green beans into the pasta. Once it was all cooked, I mixed through the sweet potato sauce, squeezed in lemon juice, and mixed in lemon zest and the rosemary. 🍋🌿
This dinner took no time to make, is packed full of great nutrients, and was so tasty and filling. Sometimes the least planned meals are the ones that really work. Right?
WRONG. The littlie took a couple of bites and announced ‘Nope. Too crispy’. 👧🏼🤦🏻♀️🙅🏻♀️❓❓#toddlerlife

pulled pork recipe, I’ve made it 3 times already😊 it’s a perfect Sunday meal and lasts me and Jake a few days for lunches and dinners! We had it with herby crispy potatoes, tomato rice, guacamole & salad one evening and then with jacket potatoes, DF cheese, salad, tomatoes and GF baguette the second night! 😍 we also had it in sandwiches for lunch!
Good evening! I have been like a bottomless pit today, have not wanted to stop snacking😩😩, so I made dinner a little earlier than usually to prevent any more snack conusumption. I’ve got wholewheat spaghetti, with the same spicy chickpea and roasted vegetable sauce I had the other day🍝. Have a great evening ✨
