//BUTTER CHICKEN//👩🏾🍳 We love this Dairy Free butter chicken. Super quick- super delicious.
We also do a vegan friendly raita with cashews, cucumber mint and lime instead of dairy.
2 tablespoons coconut oil
1 kilo. chicken thigh diced
2 onions, finely chopped
3 tablespoons chopped ginger
6 garlic cloves, crushed
1 can of organic crushed or diced tomatoes
1/4 cup cream, yogurt, or coconut milk (we use coconut for dairy free).
2 tablespoons almond butter or organic butter
2-4 tablespoons brown sugar, to taste (use coconut sugar, for paleo)
Sea salt, to taste (I like about 2 teaspoons)
1 tablespoon garam masala
1 teaspoon ground turmeric
1 teaspoon ground coriander
1 teaspoon ground cumin
¼ to 1 teaspoon chili powder
Seeds from 4 cardamom pods
Read full method instructions before you begin:
Heat 1 tablespoon of the oil in a medium-sized frying pan over medium-high heat. Add the chicken and cook, stirring frequently, until they are cooked through and no longer pink, about 12-15 minutes. Remove them from the pan. Using the same pan begin preparing the sauce. Add the remaining tablespoon of oil over medium-heat. Add the onion and cook, stirring occasionally, until the onion starts to brown, about 10 minutes. Add the garlic and ginger and cook for 1 minute more.
While the onions are cooking, place all the spices together in a small bowl. Add the spices to the pan with the onions. Let the spices cook for about one minute, or until they are quite fragrant. Add the tomatoes to the pan and scrape up any stuck on brown bits. Add half a cup of water and bring the pot to a boil. Lower the heat to medium and let the sauce simmer for 15 minutes.
Carefully add the sauce to your blender and blend on high until it is very smooth. Add the sauce back to the pan and stir in the cream, yogurt, or coconut milk, the almond butter, and the brown sugar. Season to taste with sea salt.
Serve with a side of rice or cauliflower rice.

Sunday: Slow cooked Pork! I am so in love with my slow cooker! 😍🙌🏻 It’s the most fuss free, hands off cooking and at the end you’re left with delicious grub! (Well most of the time!!) Throw it all in, turn it on and then forget about it!...and 6 hours later you have a yummy slow cooked meal! Do you have a fave slow cooker recipe?! 🤔
This was Pork with sage, onion, apple, garlic, white wine and veggie stock...then I simply pulled it apart!...I then sieved the gravy, placed back into the slow cooker and then reduced a little with some cornflour and served with some crispy roast potatoes and some roasted veg! ~
Just add a dollop of apple 🍏sauce and you have yourself a winner! 👍🏼 Also fab with some coleslaw in a bap! I’ve got lots left to whack into the freezer for another day too! ~
We’ve had such a fun yet busy weekend, I am now totally ready for bed!! So it’s an early night for me so I’m ready to take on Monday!! 👊🏻...if I can scrape myself off the sofa to actually get into bed!!

Healthy gluten free lasagna packed with vegetables 🍅🍠🥦. Stir fry 2x diced courgettes, 1x diced red capsicum, 3x diced large mushrooms. Put to the side. Cook in a pan with a little olive oil 500g turkey mince until browned. Add 4x diced tomatoes, 3 large handfuls baby spinach, handful fresh basil, 1 jar tomato passata, 1 tsp smoked paprika, vegetable stock cube & season with pepper + Himalayan salt. Add in stir fried vegetables and simmer for 1/2-1h. Once cooked, you can leave chunky or cool and put in a food processor to make a smooth sauce (good for kids, no sign of vegetables 😉). In a large dish, spread bottom of dish with the sauce. Add layer of gluten free lasagna sheets. Add layer of cottage cheese (use 500g tub). Repeat until all sauce is used (two or three layers of each - sauce, lasagna sheets, cottage cheese). Top the final layer of cottage cheese with grated mozzarella and Parmesan cheese. Bake for approximately 30 minutes at 180 Celsius or until cheese is golden. I love a simple Sunday stir-fry. It’s a perfect way to end the weekend before spending the evening relaxing (or, if you’re me, snuggling with your baby) on the couch. This one is tofu, cashew, chili, ginger & greens. Super simple, super delicious.

Bought some sp noodles at the Korean market and whipped up this teriyaki style noodle dish with lots of veg and pasture-raised eggs.
You can watch me make it on my stories, but here'a a quick recap.
Cook sp noodles in boiling water, rinse with cold water.
Scramble eggs in hot @chosenfoods
avo oil and put them aside.
Then cook veg (I used broccoli, purple cabbage, green and wax beans, bell pepper, shitake 🍄) with @chosenfoods

coco aminos, toasted sesame oil, raw honey, ginger, and some garlic (optional). Then add noodles and some more coco aminos, sesame oil, and salt to taste.
