Itโ€™s breakfast for dinner night. Scrambled eggs made with coconut milk, turkey sausage, and protein pancakes with a suace made of fresh blueberries, strawberries and mango purรฉed to top them. The sugar content of Bobs Redmill #glutenfree pancake mix was not ideal. But this was my choice after 2 failed recipes for #proteinpancakes The first recipe involved banana flour. The second, which was worst than the first, involved almond flour. not sure what came over me to try this strange fall-spiced smoothie in the middle of july but it was super good?! i figured if it was terrible i would bury it in @purely_elizabeth granola and all would be well..didnโ€™t actually need to but i did it anyways haha โ€ข smoothie: frozen banana + @plantfusion vanilla protein + cinnamon/nutmeg/cloves/ginger + almond extract + almond milk + coconut water toppings: coconut date roll + blueberries + granola + coconut + almond butter
Oven poached fish with cherry tomatoes, lemon slices, butter, capers and parsley with a side of steamed greens. Easy peezy! I poached the fish and things in a greaseproof paper parcel for 180' for 20 minutes or until fish flakes apart with a fork. It made its own sauce too! I wouldnโ€™t say that Iโ€™m a meat & potatoes kinda girl, but I did grow up eating a LOT of red meat & since then I have gone vegetarian (or should I say pasterian), integrated meat back in, to full on CARNIVORE when I was pregnant, to part-time vegetarian! I am not anti-meat, as there are some days that I need a good piece of red meat in my life, but for the most part, I donโ€™t eat it that much. I introduced fish into my diet about 10years ago when I moved to land-locked AR, go figure, and I love it!!!! Not the salmon, nothing against it, just not my fish of the sea!!! โ€ข Tonightโ€™s meatless Monday was scrumptious, marinated portobello mushrooms, with new potatoes & a summer fav of sliced cucumbers ๐Ÿฅ’ & vidila onions in vinegar...๐Ÿ‘…!!!! Oh and we had a super fantastic spinach salad with red peppers ๐ŸŒถ, cucumbers ๐Ÿฅ’, celery & almonds!! Meal beginning to end took 30mins max & that was with marinating the mushrooms for 15mins...I cooked the potatoes during that time! โ€ข Recipe details: Marinate mushrooms in baking dish with the following for 15mins prior to cooking (yields 6 mushrooms): ๐ŸŒŸ4tbsp tamari ๐ŸŒŸ2tbsp balsamic vinegar ๐ŸŒŸ2 cloves minced garlic ๐ŸŒŸ2 tspn ground ginger ๐ŸŒŸ1 tspn avocado oil Place baking dish with mushrooms in preheated oven (400) for 15mins!

I want my Insta to be as transparent as possible. Hereโ€™s a small piece of my health story. Ive had a lot of minor struggles the past few years. This will prob be a lengthy post, but I want to share my timeline. โ€ข7 years ago while I was in PT school I found a lump on my thyroid. My thyroid levels were perfect & I personally felt amazing. Biopsy was negative for cancer ๐Ÿ™๐Ÿฝ but over the years I would get routine US that showed the nodule growth โ€ขSo 4 years ago, we as a family with medical advice decided for me to have partial thyroidectomy. I now take synthroid for hypothyroidism. โ€ขAfter we got married, I decided to get off BC (not to have a baby) but to cleanse my body since Ive been on it for 10+ years(breast cancer runs in my family) I then developed cystic acne which I had never had before. So I got back on BC & the acne went away โ€ขI began throwing up randomly, having increased anxiety & blood sugar issues the past few years โ€ขall during this time my thyroid levels came back normal despite feeling like crap. I went to a GP & he told me I needed anxiety medication & the throwing up was due to increased stomach acid, so he gave me nexium โ€ขI began having migraines once a month, but dealt with it for 2 years. Finally, went to my obgyn who changed my BC โ€ขafter being on the new BC for 6 weeks, I started feeling weird. No motivation, extremely tired, night sweats and throwing up for a week straight. Called the doctor again. So they changed me from estrogen BC to progestin BC. Iโ€™ve been on these for 2 weeks but eventually want to wean off all synthetic hormones โ€ขI share all of this with you guys to say, Iโ€™ve now done my own research (ty podcasts) i will be changing a lot of things in my diet to help with a few things I think I have going on (estrogen dominance, thyroid, adrenal fatigue) I plan to get blood-work & full thyroid panel soon โ€ข1 week of cutting out dairy, gluten, grains & sugar (not completely but significantly) I feel a ton better. I plan to share my meals on my instastories as I go through trying to get my body right. I hope this can help someone who is struggling too. Iโ€™ve been overwhelmed by it all, but I plan to enjoy my vacay to the fullest next week

Week four is done and I'm down a total of 14.6 pounds. I only lost .4 pounds from last week, and I can honestly say it's okay. There's a couple things at play here. I can't expect to drop 5 pounds every week. That's not realistic. I'm actually shocked that I lost almost 15 pounds in a month. That alone is so exciting! I know that your body needs time to recover from losing, so I wouldn't expect another loss for maybe a week or two. Also, good ole shark week is ramping up and all the ladies know what that means ... Bloating. So, we'll see what happens once that's done. My thirty day challenge is coming to a close. I will eat dairy again, but in much smaller amounts. I was eating a ton of dairy. I think the biggest thing I got from this was that I enjoy a more whole foods approach to keto. It's cheaper and healthier than eating prepackaged foods. Food today was pretty darn good! Trying to get in more fruits & veggies throughout the day by taking on the #800gchallenge with @optimizemenutrition. Iโ€™m not sure why I thought it could be difficult, because I crushed today with a total of 1,136g between all of my meals and snacks. The only thing not pictured was a serving of sweet potatoes that I had along with my burger for dinner tonight after an evening spin๐Ÿšด๐Ÿปโ€โ™€๏ธclass. After a lot of indulging and not working out this past week, it felt great to be getting back on track today.

For these, I used half ground beef, half ground chicken (1/2 lb each), cooked with 2 tbsp. soy sauce, 3 tbsp. fish sauce, juice of one lime and just a tinnyyy bit of butter (trust). I used butter lettuce for the wraps and loaded them up with basil, mint, scallions, and jalapeรฑos.

Tear off four 12" squares of foil and arrange on two baking sheets. In a small bowl, combine the couscous with 1/2 cup water. Divide the kale among the pieces of foil. Top with the couscous, then the tomatoes, garlic and shrimp. Drizzle with the oil and sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper. Cover with another piece of foil and fold each edge up and over three times. Roast or grill (covered) for 15 minutes. Transfer each packet to a plate.
