🎄⭐️ Cranberry Relish ⭐️🎄so simple to make and far better than the sugary bought versions. I used sulphurdioxide-free dried organic cranberries. Here’s the recipe: 1 small red onion, finely chopped
1 tbs extra virgin olive oil
250g dried organic cranberries
200mls water or wine (I used) or apple juice
Zest and juice from 1 organic orange
2cm knob ginger, peeled and coarsely grated
1 - 2 tbs apple cider vinegar
1 green apple, cored and coarsely grated (optional, I used because I had it in the house)
Into a saucepan put the oil and onions, and gently cook until soft.
Then add the rest of the ingredients to gently cook for about ¾ hour on low heat, until the cranberries are really soft and falling apart a bit.
It should be quite thick and pulpy, having absorbed all the liquid. If not then gently cook it a little longer.
Taste the relish to see if it tastes too sweet or sour. This part really depends on you. If it’s too sweet for your taste then add a little more vinegar, if it’s too sour then add in a little honey.
