✨Greek yogurt mixed with chia seeds and topped with chocolate granola, blueberries and leftover baked apples (maked a big batch a few days days ago to use for breakfast throughout the week). A bit of a honey drizzle to round it up and, voila, a quick and satisfying breakfast ready in 3 min! 🙌🏻 Also, the sun is out for the first time in weeks and tomorrow is Friday so life is great! 💃🏻
When I talk about rainbow plates for kids - this is what I’m talking about 👊🏾The more colours you can get on there, the more goodness goes in! Red, green, yellow, white - chicken, egg, cucumber and tomatoes 💕 I am passionate about preventative health and working to reduce disease risk- so I’m passionate about keeping kids healthy and diet is a major part of it! As a GP I treat young kids with obesity who have a higher risk of type 2 diabetes, fatty liver problems, hip disorders and certain cancers. I work hard, very hard actually, to keep our house stocked with fruit and veg and to keep healthy veggie packed meals around 🥗🌮🌯 I do it to reduce Miss S’s risk of chronic health problems- it’s incredible how much diet can have an effect on the trajectory of your child’s health, you have some control over their chronic disease risk, that should excite you. We now know a diet high in processed foods, salts and meats is linked with mental health problems such as depression in adolescents. Heart, joints, liver, brain- diet has a huge effect on them all 🤯 So how do you get colour on the plate?! •

I have recently started making Kefir 🧐 yes I had never heard of it either!!! Kefir is a type of grain (although it looks more like white frog spawn!!) and when added to milk it ferments the milk increasing its probiotic & nutritional properties as well as reducing the lactose content of milk! It has a tart flavour like a natural yoghurt which I really like!
I have been having it mixed with fruit as a smoothie! This one I had for breakfast this morning was delicious!! Kefir, dried apricot, banana & blueberries!
The photos show how the Kefir is made - you place the grains with milk at room temperature and leave overnight - then the kefir grains are strained and placed into more milk and the process repeated!

🌟Day 122🌟Dinner- tried mushy pea curry for the first time! I like it but I’m gonna tweak it a bit I think the next time! It makes a pretty massive pot too so plenty left over to freeze and use another time! So, half a bowl of baby spinach, mushrooms cooked with onions and peas, shredded roast chicken from last night’s roast and some boiled rice. Curry sauce then on top. 🌟Day 122🌟Breakfast- 5min breakfast- pan on, beans into microwave, crack eggs into pan. Chop a few tomatoes and bit of red onion. Stop and stir beans. Add tomatoes and onion, stir and back on for 1.5min. Check eggs, chip spinach. Take out beans, stir through chopped spinach, eggs on top and you’re done!
