I’ve been focusing on rest, and spending time with my kids. .
Today it is 105 here, and my 6 month old doesn’t tolerate the heat well. .
So, she stayed inside with Dad while big brother and I played in the kiddie pool outside. .
But! Not before I made this delicious watermelon slushee. .
I’m not a fan of eating watermelon plain. I usually don’t even like watermelon flavored things. But this. This is 👌🏽👌🏽👌🏽
Tis the season for watermelon, so I believe we will be living off of this the next few weeks. .

• 4 cups frozen watermelon (cut from a whole watermelon and then frozen) .
• 1/3 cup coconut milk
• 1 tbs organic lime juice
• splash of organic maple syrup .

1 cup light coconut milk
1 cup milk of choice
1/2 cup blueberries, pureed in blender (plus more for topping)
2 teaspoons honey or maple syrup (optional)
2 tablespoons chia seeds
1/2 teaspoon vanilla extract (optional) •INSTRUCTIONS:
Stir together all ingredients in a medium bowl. Divide into two pint sized (16 oz) mason jars. Cover and place in fridge for at least three hours, or overnight.
Remove from the fridge and stir to break up clumps. Add additional milk and sweetener as needed.
Enjoy hot or cold!

Indonesian-inspired egg & vegetable curry with broccoli, carrots, baby corn & sugar snaps simmered in coconut milk, with mushroom rice.
It’s flavoured with a curry paste I made from fresh spices from Jakarta a couple of weeks ago (turmeric, ginger, galangal, krachai, lemongrass & daun salam leaves), to which I added red chillies & candlenuts.
It was a rather large quantity, but curry pastes freeze really well so - although I don’t really like freezing things - they’re handy to have in stock for those days when you don’t have much time to cook.
The fat of the coconut 🌴 oil, present in the food 🥘,gives more satiety, combats inflammations, improves skin health and even assists in bone and heart health. In addition, like vegetable milk 🥛,it is zero lactose, indicated for anyone who has any intolerance to that substance.
It can be consumed pure or with some combination, as in smoothies.The advantage is this drink 🍹 is to contribute even more benefits to the food.
In this case I combined banana 🍌 with apple 🍎.
Banana 🍌 is rich in fiber, potassium, vitamins A, C, B vitamins (B1,B2,B6 and B12), as well as calcium, magnesium, folic acid and iron.

Cold nights call for hearty meals made with love, and lots of veggies. Butternut & Chickpea curry
1 medium size butternut chopped(size close to chickpeas)
1 small onion chopped fine
1 can coconut milk/cream
Half a bunch of spinach chopped
1 can @rhodesquality
1 cup water
Salt and pepper to taste
1 tablespoon curry paste/ 1 tablespoon curry powder with 1 teaspoon garam masala
2 cloves garlic chopped fine
Oil for frying
Small bunch coriander
In a medium sized pot/deep pan, fry your chopped onions in a little oil till translucent on medium to low heat. Once onions are done, add in garlic and stir, give it about a minute to cook. Add curry paste, stir and allow to cook for 2minutes.
If the mixture is too dry and sticking, add a little water to loosen.
Add drained chickpeas, butternut and coriander. Stir. Add coconut milk/cream, water and salt & pepper to taste. Stir and cover with lid.
Simmer on low to medium heat for 40 minutes(my stove is 1-6, I keep it on 3)
After allocated time, add spinach, check seasoning and turn off heat. In 5 to ten minutes your spinach would've wilted and soaked up the flavor.
Serve with rice/roti/poppadoms

If you have, CONGRATS! And let’s go another 1-2 days. Try to hit 5 before you take that rest day, even if it’s just going for a walk. .
If you haven’t worked out, why? What’s stopping you, holding you back?
Be open and honest, that alone will help you feel free of beating yourself up over not working out. Then we can set an action plan to get you and your body moving 💕. .
For me. I’ve worked out 2 days and took the 6 days prior as rest. Ask me the last time I took more than 3 days off in a row??? Probably when I had my second son...7 years ago 😂. .
As hard as it was mentally to not workout, your body needs time rest and recover. Sometimes we get so caught up in the daily routine we forget that our muscles want to repair and take a break too.
Whether it’s your rest or workout day, remember to listen to your body. It craves movement, but it also requires a little recovery time too! .

Vegan Coconut Victoria Sponge Cake
Shrimp, tomato, and spinach on whole grain pasta, with a curry inspired tomato sauce ❤️ —You will need: 1 can coconut milk(2 cups)
2 cups chopped tomatoes and their juice
1 lb shrimp, peeled and cleaned
1 1/2 cups fresh spinach
*mushrooms would also be a great addition, although I skipped them this time
Spices: Dried basil, oregano, paprika, balsamic vinegar, tomato boulion (listen, I suck at measuring slices. Just add a LITTLE and taste until it's your style)
This could definitely go with rice or riced cauliflower for a bit of a smarter option! 👍
Start boiling noodles, with a dash of olive oil in the water
In a large pot, put can of diced tomatoes and can of coconut milk and bring to a low simmer. Add in basil, garlic, paprika, tomato boulion, oregano, and pepper.
If you want your sauce a little thicker, you can sprinkle in some cornstarch or flour.
Add in spinach
Bring a medium skillet to high heat, and put in butter until it's fully melted and sizzling
Drop in shrimp and let cook until pink on the top sides(bottoms should be browning and crispy
Remove from heat
Turn off heat on sauce and add in the shrimp
