So we dug a well, burned a palm tree and started making rice noodles with the water and ashes just to make this dish. Just kidding! Unless you’ve been to Hoi An, you’ve probably never heard of Cao Lau, a dish unique because of how the rice noodles are made only with local well water and ash from the local trees. it’s not served anywhere except in Hoi An itself. The world is truly missing out. But we’re not letting the mythology behind Hoi An’s most famous dish dissuade us from making a variation of it! Cao Lau is an amazing almalgam of Chinese, Japanese, and Vietnamese flavors that it’s so unfair not to spread how delicious it is! In this case, the sum is truly greater then its parts. I cook a lot of Asian food...one of my favorite weeknight healthy dinners is this pineapple chicken stir-fry in the carbon steel wok over a super hot propane burner. .
Tip: a carbon steel wok is of of the most versatile and used pans in my kitchen. The wok becomes completely nonstick with proper seasoning and will continue to develop a dark patina with use.
