Lunch at home today featured Swiss Tête de Moine (Monk’s Head) cheese on a girolle, the blade of which scrapes the cheese into cone-shaped rosettes. Also on the board were a few slices of prosciutto and some freshly-baked bread which I had started the evening before as poolish, as well as Kalamata and Castelvetrano olives, and bread and butter pickles.
