💜🥔PURPLE POTATOES🥔💜: Today’s salad bowl was definitely brought to you by my continued love of purple majesty potatoes!! I’ve found these the past two months at my local @wholefoods
and I just love that you can boil a batch and they stay in the fridge for up to 2 weeks—perfect to just grab and slice into a salad! What I love most is these are NOT sweet! Don’t get me wrong, sweet potatoes are lovely and all but I’m a savory-flavor-loving-girl at heart! So I love that these purple potatoes have more nutrients than standard varieties you find at the store. I also found a great video by Dr. Greger where he explains a study that found that purple potatoes reduce inflammation & DNA damage and lower blood pressure compared to white and yellow potato varieties (get a link to the video in my stories)! . ❓What’s your position on potatoes❓ There’s such a spectrum of scientific opinions on whether they’re healthy, what color is best and how they should be prepared!
