I’m so glad my friend & chiropractor, Kristen at @caremorechiropractor recommended this book! I waited too long to get it! . So far I’ve made this Strawberry Salad, (the dressing is amazing)! Anti-inflammatory meatballs, plantain wraps, mojo chicken, mango avocado guacamole, pork Shanghai stir fry, (@danielmdurham loved it, he had seconds)! . In fact, we are about to eat the meatballs with spaghetti squash & pesto for lunch! . I’ve been daydreaming about this sunnyside-up chorillana since yesterday. Chorillana is a traditional Chilean dish of steak, spicy sausage, finely diced onions, potato fries, and two fried eggs. This cholesterol bomb was born in the harbour of Valparaiso and was only served on weekends. Maybe because it’s the best hangover cure ever?! And hey, it’s also gluten free... 👀 My friends @sune_v and @christopherkeet have been tackling South America recently and I’ve been reminiscing about the mariscos cazuelas (seafood “soup”), the carbonara, and basically anything with pebre (hot chilli pepper sauce). This will just have to do for now!
I seem to crave beets and broccoli more than any other vegetable. I prefer to roast them in a fairly hot oven with a little salt, garlic, and ghee + finish with a splash of lemon juice before serving. Happy Friday y’all!

I’ve been on this journey for 1 year & although there are still some unanswered questions I’ve learned so much: 1. It’s hard to share that before picture (I obviously had no idea I would ever show anybody that photo 🙈, Instagram wasn’t on my radar), but accountability & vulnerability are big parts of my journey. 2. Gluten & dairy aren’t my friends. They cause inflammation & prevent my intestinal lining from functioning properly. The damage they do to my intestines allows inflammation to spread. There are other foods I can’t handle either, but we are still figuring that out. 3. Food is medicine. Foods can heal. The mind body connection is stronger than I first understood. 4. Sourcing our food from sustainable farms & viewing what we eat & how we treat our bodies is part of God’s big story of redemption & restoration. 5. Healing takes time. A year ago I wouldn’t have believed I could be at this point but change can happen. You aren’t stuck. New habits can form. My health might not be where I want it to be but I know I am less anxious, happier, more content, at a healthier weight, have clearer skin. My liver is functioning better & my hormones are more stable. All that happened because I learned how to feed my body & manage stress. . “Be transformed by the renewal of your mind.” We are given one body and one life, the days fly faster and faster the older we get. These pictures remind me that change can happen. You might feel stuck but you aren’t. Change begins with just one step forward. Assess where you are right now. Set a goal for where you want to be and then start taking baby steps. Yesterday’s breakfast: scrambled sausage meat (batch-cooked ahead of time), mixed with sautéed spinach, and topped with avocado. Same breakfast today, except that I diced up a parsnip and sautéed it and added it to the mix. (And I’m out of ripe avocados today.😭) I had a green smoothie on the side made by Chris, who’s currently obsessed with perfecting his tropical green smoothie recipe. (Pineapple, mango, a ton of kale and/or spinach, a full can of coconut milk, collagen... Needing something to keep you warm over the next couple days as this crazy weather gets all rainy and cloudy? This Italian Sweet Potato, Sausage and Kale Soup hits the spot every time, and is so versatile. This is both Paleo and AIP friendly, and can also be made low carb friendly by omitting the starches. Italian Sweet Potato and Kale Soup Serves 4. 1 pound ground beef (you can use Italian sausage, ground beef or ground turkey) 1 bunch of kale 1-2 sweet potato (I am using white sweet potato here. Omit if trying to do low carb!) 1/2 white onion Any other veggies you may have! I added in zucchini, bell pepper and mushroom. 4 cups beef broth 1 can full fat coconut milk 1 tbsp olive oil or cooking fat of your choice Generous amounts of Italian herbs, garlic, onion, salt and pepper. You can also add paprika (not AIP) for a little different flavor. Brown your meat and then set aside. Heat up your cooking fat and cook your chopped veggies until they start to soften, then add in kale and browned meat. На #aip птицу можно есть, но нечасто. Это именно тот редкий случай. Филе индейки, тушеное с мидиями, грибами шиитаке и вялеными оливками: 🌱филе индейки — 1 кг 🌱свежемороженые мидии — 200 г 🌱сушеные грибы шиитаке — 30 г 🌱вяленые оливки — 200 г 🌱кокосовые сливки — 200 г 🌱кокосовое масло — 50 г 🌱горячая вода — 0,5 л 🌱мёд — 2 ч. л. 🌱лук — 1 шт. 🌱чеснок — 4–5 зубков 🌱розовая гималайская соль и сушеный имбирь по вкусу🌱🌱🌱🌱Грибы поломай и на 30 мин залей горячей водой. На растопленном кокосовом масле обжарь лук до золотистого, добавь порезанное кубиками филе индейки и жарь, помешивая, ещё 10 мин на среднем огне. Положи к мясу и луку грибы вместе с водой, в которой они замачивались. Туши на медленном огне 15 мин. После добавь вяленые оливки и мидии, дай потомиться ещё 15 мин. В конце влей кокосовые сливки, мёд, положи соль, сушеный имбирь и мелко нарубленный чеснок. Дай покипеть пару минут и снимай с огня. И вес соцветий брокколи без кочерыжки, вымыты и очень хорошо обсушены. 🌱 15 штук 🌱 250 г свежей брокколи 200 г отварной говядины 40-50 г муки из кассавы 40-50 г топленого масла 2 ст. л. (мерные) холодной воды 2 ч. л. лукового порошка 2 ч. л. чесночного порошка 1 ч. л. сушеного базилика 1 ч. л. сушеного укропа морская соль 🌱 На обычном Палео + свежемолотый черный перец паприка 🌱 Соцветия брокколи измельчить в кухонном процессоре как можно мельче, переложить в отдельную большую миску. Отварное мясо измельчить в процессоре в фарш, переложить в миску с брокколи. Добавить растопленное масло, муку, специи и воду, тщательно перемешать. Если капуста очень сочная, воды может потребоваться меньше. В итоге должна получиться масса из которой хорошо лепятся шарики, а если их приплюснуть, то не образуется слишком большое количество трещин. Если масса рассыпается, добавить еще воды и хорошо вымесить, а если липнет к рукам, добавить еще немного муки. Духовку разогреть до 175 градусов, режим верхний гриль + конвекция. Противень застелить бумагой для выпечки, сформировать небольшие польпетты, выложить на противень, смазать поверхность польпетт... Продолжение 👇👇👇

🐟🍃A healthier take on fish and chips! Grilled cod with mixed greens, pickled turnips and a mustard aioli sauce on the side. I breaded the cod with almond flour, garlic, paprika and parsley and grilled with olive oil for about 4-5 minutes on each side. Enjoy!✨👌😋
SPRING CHICKEN // I was literally singing to this chicken as I was taking its photograph: “You are so beautiful...to me...can’t you see!? You’re everything I hoped for...” I caught myself and then realized I probably needed to get out of the house more. 😂 However, you really can’t argue that it’s a beautiful bird! Roasted along with “hearty” vegetables like carrots, green cabbage and white sweet potatoes (per the recipe from @hewontknowitspaleo ). Literally wanted to eat the whole roasting pan in one sitting!

Food. It’s no joke. I love it. But I also use it to “treat” an autoimmune disease, which can be tricky. Today’s food for me was @epicbar + fresh organic green juice from @naturespickmarket and a salad with shrimp, cucumber and avocado for dinner. Oh! And my afternoon antioxidant-rich @younglivingeo NingXia Red that literally fuels my cells. Often times my family and I eat the same, but there are a lot of nutrient dense foods that they can have and enjoy that I cannot. So sometimes I just modify or quickly throw together a salad for myself with whatever protein I’ve prepared. It’s become routine, and while it’s not always easy, I am so thankful for the tool of using food for my body’s healing! What a gift! Yesterday, I (@honest.intake ) talked about changing your perspective and being grateful for the body you have. This does not mean you have to be eternally optimisitic. At times, my diseases still make me bitter, discouraged, and downright hopeless. The difference is that now I respect whatever my body is feeling AND also search for a silver lining. . . If you need to hold a 15 minute pity party, well then go all out, dammit. Cry, mentally scream at the world, and confide in your best friend. If you are feeling elated that you were able to leave your house for the first time in days, well then shout it from the rooftops—go ahead, you deserve it. . . Our emotions are real, respect them by acknowledging their existence. Too many times I have been guilty of shoving my emotions under the rug, putting on a brave face and pretending everything was normal when I felt like my world was crashing down around me. Slowly, I have been learning to respect my body and my emotions at whatever stage they are in. #HonestAIP [@honest.intake ] . . This Banana and Blueberry Spinach Smoothie is a healthy snack or addition to a meal. It’s a fruity smoothie filled with leafy greens that your kids (big or small) will enjoy.
There is something for everyone to nosh on in this veggie tray bake - I started with hasselback purple sweet potatoes doused with a spinach pesto and more than half way through roasting those( 30 min mark at 400 deg) added spinach, kale, cauli, broccoli, Brussels sprouts and red cabbage for another 20 mins. Generous drizzle of avocado oil, pinch of turmeric salt and pepper to taste. A month ago I was released from the hospital, in agonizing pain, barely able to eat, withdrawing from opiates, and completely unable to get around without my wheelchair or walker. Life was dark, and I felt hopeless. I had begun to rack up autoimmune diagnoses and along with those come many prescriptions and very scary side effects. It felt like life was just happening to me and I hated it. With the help of some amazing doctors and counselors, I’ve begun to take back my life and my health. I’m fighting AGAINST a life full of prescription meds, focusing more on nutrition, stress management and true HEALING. Less stress, more meditation ✌🏻🧘🏻‍♀️ Less junk food, more whole foods 🥑 Less opiates, more weed... err I mean, my prescribed medical marijuana 😅🌿 Daily stretching, counseling, journaling and talking to dear friends has turned me from a very sick and depressed person, to someone who is again hopeful and on her road to find healing.
