Today, we’re making cauliflower risotto. I’m sure by now you’ve tried cauliflower rice and realized that with a bit of TLC, it can be turned into just about anything (pizza crusts, rice, crunch texture, soft texture). After doing the hemp heart “wild rice” recipe, I started experimenting more and more with cauliflower to get a creamy texture that I was longing for in a risotto. Lo and behold, here it is!
1 tablespoon olive oil
2 cloves garlic
4 medium baby bella mushrooms
1 cup chicken broth
1 medium cauliflower, riced
¼ cup heavy whipping cream
¼ cup Parmesan cheese
1 teaspoon tarragon
Salt and pepper to taste
This makes a total of 4 servings of Low Carb Cauliflower Mushroom Risotto. Each serving comes out to be 143.75 Calories, 10.35g Fats, 6.31g Net Carbs, and 5.25g Protein.

We've got that Friday Feeling so we grill fried chicken with Code 3 Spices Rescue Rub seasoning for lunch. .
Set up your Primo Oval for indirect heat with 1 heat deflector plate and heat deflector rack on the right side of the grill, light and stabilize temperature around 400º-425ºF.
Ingredients (for 4-6 boneless chicken thighs):
- Season raw chicken with Rescue Rub and refrigerate for 30 minutes to 1 hour.
- Crush unseasoned pork rinds in a medium size bowl to make roughly 2-1/2 cups and mix in 1/2 Tbsp of Rescue Rub.
- Mix 1:1 ratio of mayonnaise and mustard in another medium size bowl.
- Dredge chicken in mayonnaise mustard mix for a thin coat, then dredge in crushed pork rind mix until coated.
Add the chicken to the grill over the indirect heat side and close the grill. Flip roughly every 10 minutes until nearly done (185ºF internal temperature for thighs with an instant read thermometer). At the very end you can move the chicken over direct heat for 2 seconds on each side for a little extra crisp and browning.

So today I tried the Quest Protein Tortilla Style Chips (Nacho Cheese 🧀 Flavor) and guys... This deserved a post of its own, because it is a true star in my eyes 🤩. Seriously guys, it taste just like Doritos to me 🤤, I am in true shock!They even got the shape down pact 😯 (you can swipe to see). I had this for lunch, but I’m about to have it for dinner as well, but make loaded nachos with it! I seriously can’t wait 😈! I’m seriously going to need a lifetime supply of these because they are so good. For anyone that’s wondering, there are 4g of Net Carbs per bag 😬.
