Wholimama's Matter Gobhi with Creamy Cashew Curry This dish is fun, decadent and super satisfying. As a child I loved this Indian classic with paneer and slathered in sour cream. I don't miss the dairy version at all with this healthy vegan alternative. Goes excellent over rice or quinoa. Serves 6 Whats in it: 1 head of cauliflower, small florets 1 bag frozen peas 3 peeled carrots, bias cut or cubed 1 1/4 cup cashews, soaked 2 1/2 cups unsweetened almond milk 1 tsp salt 1/8 tsp black pepper Curry ingredients: 2-3 tsp Hing 1/2 tsp Turmeric 3 tsp Cumin powder 2 tsp Coriander powder 1/4 tsp Cardamom powder 1/2 tsp cinnamon powder 1/4 tsp Anise seed powder A small pinch of Fenugreek powder 1/8 to 1/4 tsp of cayenne or chili powder (optional) Olive oil for chaunce and shallow frying How it's done: On Meduim high, heat 1/2 inch of oil in a non stick frying pan (cast iron is the best!) When oil is hot, shallow fry the cauliflower in 2-3 batches for 3-4 minutes, stirring each minute to ensure even browning. Place cauliflower in a bowl lined with paper towel to soak up excess oil. In a small bowl, combine hing and turmeric. In a different small bowl, combine remaining curry ingredients. Heat 2 tbsp oil in a skillet and sautée hing turmeric combo for 2 minutes. Add remaining curry mixture, give a quick stir, then throw in the carrots and a 1/3 cup of water. Mix so the curry can blend with the water. Cover and cook for 3 minutes. Add the peas and cook for another 5 minutes. Add cauliflower and cook for another 2-3 minutes. In the meantime, blend cashews with the almond milk on high until smooth. (Add 1/2 cup of nutritional yeast to give it a cheesy flavor) Add mixture to vegetables along with salt and pepper and stir to incorporate. Apricot Glazed Seitan This particular glaze has an Asian flare so it's a great compliment to stir fry or lo mein. Feel free to experiment with other jam flavors. What's in it: 16 oz of Seitan (get the kind that's soaking in water like tofu for a juicier texture) 1/2 cup apricot jam/preserves 1/4 cup soy sauce 2 tbsp rice vinegar or other vinegar (I'm not a fan of vinegar so I use less) 2 tbsp sugar (if your jam has sugar, add less) 1 tsp ginger 1 crushed garlic clove 1 tbsp oil A pinch of cayenne powder How it's done: Preheat oven to 400deg Put all ingredients except for Seitan a blender and blend for 10 seconds Cut Seitan to desired size and shape and put in baking pan. Add sauce over Seitan and mix Cover with foil and bake for 20 minutes Remove foil and bake for another 10 minutes If you want to blacken the edges, put on the top broiler for 2 minutes. Finger Lickin No Chickn Pot Pie Whats in it: Vegan ready-made flour pie crust 12 vegan phillo sheets 2 peeled medium potatoes, small cubes 3 medium carrots, diced 8 oz frozen peas 1 small head of broccoli, small florets 1 pack of Gardien vegan Chicken Scallopini 1/4 cup Spelt or Einkorn flour 2.5 cups of unsweetened almond or rice milk 1/2 cup meltable vegan cheddar 1 tsp dried sage 1/2 tsp dried marjoram 2 crushed garlic cloves 1 tsp salt and a pinch of pepper Spray oil (there are good organic brands) with no propellants) Spray bottle with water Oil of choice How it's done: Preheat oven to 400deg Heat vegan Chicken Scallopini in a toaster oven on 400deg for 20 minutes, or pan fry in a nonstick skillet. Heat 2 tbsp oil in a large skillet and sautée half the garlic for 2 minutes. Add carrots and sautée for 3 minutes, stirring occasionally. Add potatoes and peas, sage and marjoram and cover. Sautée for another 3 minutes. Add broccoli and sautée for another 5 minutes. Remove from heat. Add vegan chicken. Scrape bottom of pan with wooden spoon to prevent sticking. Add a little bit of water if necessary. In a sauce pan, heat on medium low 2 tbsp oil and sautée the other crushed garlic clove for 2 minutes add flour and whisk frequently. After about a minute, add a little of the vegan milk and whisk to combine. Add the rest and whisk. When the milk gets hot, add vegan cheese, salt and pepper and whisk frequently for 3 minutes. Add sauce to veggies and stir in. Scoop filling into pie crust. If you have left over filling, fill an oiled ramekin and use the same topping. Crumble 4 fillo sheets and spray top with spray oil. Crumble another 4, spray and repeat with remaining. After spraying oil on top, spray about 10 sprays of water. This will prevent the little fillo pieces from drying out and burning. Bake for 20 minutes or until topping is golden and crisp.
