Romaine lettuce hearts; pack of 3 from @365bywholefoods
2 Roma tomatoes halved and then cut in half moons
1 avocado; chopped
10 dates; pitted and chopped
1/2 cup sliced almonds
2 ears of corn; roasted and cut off the cob. Or you can do 1 cup frozen corn, thawed
1 rotisserie chicken; shredded
Goat cheese; as much or as little as you like
1 cup cornbread croutons. We bought a small loaf of pre-made cornbread at @wholefoodssandiego.
Cut into cubes, drizzle with olive oil, salt and pepper and store in ziplock overnight. Place on lined cookie sheet and bake at 350° for about 10-15 mins.
1/2 c olive oil
1 tsp balsamic vinegar
2 tbsp Dijon mustard
Juice of 1 lemon
1 tsp brown sugar
1/2 tsp salt
1/2 tsp pepper
2 garlic cloves; minced
1/4 tsp dried basil
1/4 tsp dried oregano
Whisk together and toss with salad. Enjoy!
