It’s been a day - and I’m glad to keep busy to distract from the negative things that come up. I started my morning bright and early at the beach, stayed until about noon - I did not want to “over bake”. I came home to get the sand off, and got in a nice long walk and grocery shopping done. Got in a good amount of steps, was under calorie goal - I had nice cream for brunch, and a bag of pop corn when I got home - until I made dinner. Tonight I made a #califlower #friedrice just using up some of the older vegetables in the fridge (i hate to waste food) and I always have frozen corn, peas and riced cauliflower in the freezer. I found these #yuba knots in a Chinatown market a wile back and had them hiding in the freezer too - they taste good and look fun. I ran a 15min mile with my 3yo at 6pm on Sunday evening to tire him out. After we finished I looked at my hubby and said, "I feel good, mind timing me if I run another mile?". I haven't run since 4/25/17, so I had no idea what to expect (10-12min)?!? . I took off at a solid pace and knew this was going to be pretty tough. Running is so mental, so I had a quick pep talk with myself around the first turn. "This is going to be tough Nicole, so keep your pace for the first 2 laps. The third lap a bear will jump on your back, so hang in there and fight through it. Keep your stride long and your breathing in tack. The last lap you're on your way home." . My legs and glutes felt stronger than ever and my mind was determined. FLAVOURED LEMONADE 🍹Recipe below ⬇️ . Cool off the summer heat and stay hydrated with different flavoured but equally refreshing lemonade! Pictured from right to left is basic lemonade, orange lemonade, raspberry lemonade and blueberry lemonade - but the options are endless. We've tried watermelon, strawberry and pineapple in the past! . . . BASIC LEMONADE: serves 8 4 med-large lemons 6 cups cold water 1/2 cup water 1/2 cup honey* . 🍋Roll the lemons back and forth on the countertop a few times so they release more juice. Juice the lemons. If you want to make lots of lemonade throughout the summer, I would really recommend buying an electric lemon/orange juicer! 🍋 Warm up the 1/2 cup of water in a small pan. Pour the honey in and stir until dissolved. * Honey will change the taste of the lemonade, so if you prefer you can use white or cane sugar instead. 🍋 Pour the 6 cups of cold water into a jug or punch bowl. Add the lemon juice and sweet syrup. 🍋 Add ice cubes to serve immediately, or let chill in the refrigerator. . . . FLAVOURS: 1/2 cup fruit of your choice 1/2 cup water . 🍋 Blend the fruit and water together. ** For orange lemonade, simply juice one large orange. 🍋Strain the blended mixture. 🍋Mix the fruit juice into your basic lemonade.

Only took a few snaps 📷 but they truly don’t do justice to how beautiful & delicious everything was! . . As an entree we ordered a Raw Carrot Kibbeh (smothered in tahini sauce & topped with fresh pomegranate). This was my favorite dish, the flavor combo was unexpected yet delightful!⭐️ . . As a main dish I ordered Coconut Curry with Rice Noodles 🍛 (coconut cream curry with sweet potato & cauliflower, served on a bed of rice noodles). It was very flavorful & satisfying, with a lil spicy kick at the end!🔥 . . My friend ordered the Beet Ravioli (beet dough filled with goat ricotta & almonds, coated in a truffle cream sauce). Love that it was packed with flavor yet none of the ingredients were overpowering.☁️ . . We also tried a delicious & super refreshing drink, but that one deserves its own post!😅 . . For this sandwich, normally I would use one bun sliced in half.
