Reality: does anybody get 3 cups daily and consistently!? I mean, seriously?
But.... there are ways to make it easier! Like keeping a freezer stocked with frozen veggies, adding veggies to your smoothie, and if you're feeling ambitious, swapping pasta/noodles for zoodles (zucchini noodles), riced cauliflower, broccoli slaw, etc.
Spice things up a bit! Try some of those spices collecting dust in the cabinet.
Invest in a good balsamic vinegar (I use #pinetopoliveoil
aged 18 years that I bought at a farmer's market in Gilbert, AZ #noregrets
). That's what I used on these baked green beans and cremini mushrooms with minced garlic and olive oil.
That side of veggies you've been avoiding can become a show stopper!
