Vegan Poke 🌺🥥🌼🚫🐠

I made this poke 100% vegan by using young coconut meat from @zumavalley
instead of fish. The flavor from young coconuts is neutral and mild because its flavors have not been fully developed, unlike a mature coconut which has that sweet, coconut-y characteristic taste. This makes for a great meat substitute!
The texture and the flavors in this poke were so on point.👌🏽Try it as a poke bowl and load up on your veggies by adding avocado, cucumbers, shaved carrots, kimchi, salad greens and brown rice, or as is with crispy wonton chips as pictured in the second photo.
Added bonus? 1 cup of coconut meat has 10 grams of fiber which is about 36% DV! 💁🏻♀️
In a large mixing bowl, add:
- 12 oz young coconut meat, cubed
- 1 tablespoon Maui onion, minced
- 1 Persian cucumber, sliced into rounds, then quartered
- 1 tablespoon sesame seeds
- 3 tablespoons soy sauce
- 2 teaspoons rice vinegar
- 2 teaspoons sesame oil
- 2 teaspoons rehydrated hijiki seaweed
- 1 teaspoon sambal or sriracha
Mix together until ingredients are incorporated. Serve immediately.
