Decided to try my own version of @ww_kerri 's sweet potato bowl. Used frozen butternut squash that I cooked in the microwave and then mashed. I let it drain a bit in a colander to remove any extra liquid. It measured out to a little over 1/2 cup (10 tbsp to be exact). Mixed that with 1/2 tsp of brown sugar and ground cinnamon to taste. Crushed up 7 whole almonds (1sp) and mixed with 3/4 tsp of sweetened shredded coconut. 1 tsp of roasted sunflower seeds and 1 tbsp of almond butter (3sp), plus fruit. Not sure how it's gonna taste yet, but it looks gorgeous!
