So, what does she have lined up? Another uberyum #paleo
recipe. This week she shared her portobello bun lamb burgers with paleo fries for y’all.
Lamb burger ingredients:
•2 red bell peppers, rough chop
•1 small yellow onion, rough chop
•3-4 sun dried tomatoes
•1/4 teaspoon fresh oregano
•1-2 garlic cloves
•Handful of spinach
•1 pound ground lamb
•1-2 teaspoons almond flour
•4 portobello mushroom caps
Guac topping ingredients:
•2 small tomatoes, diced
•1 small onion, diced
•1 garlic clove, diced
•Juice of 1 lime
Paleo fries ingredients:
•3 sweet potatoes, diced or cut into strips
•Scoop out the ripe avocados into a bowl. Mash the avocados with a fork until smooth or chunky (it’s up to you).
•Pour lime juice and the vegetable with the avocado. Mix it all.
•Season with salt to taste preference.
•Place to the side.
Lamb burger steps:
•In a food processor, combine the red bell peppers, onions, sun dried tomatoes, oregano, garlic, and spinach. Process until finely diced.
•In a separate bowl, place the ground lamb, the vegetable mixture, and two punches of salt. Combine using hands.
•Add the egg and almond flour to the mixture to make sure the burger sticks when it cooks.
•Make 4 lamb burger patties out of the mixture.
•In a pan on medium heat, cook the lamb burgers in avocado oil until done. It should take 3-4 minutes on each side.
•In a separate pan, sauté the portobello caps in avocado oil for 2-3 minutes on each side.
Paleo fries steps:
•Preheat oven at 400°F
•Make sure cut sweet potatoes are patted dry by using a paper towel.
•On a baking sheet, place the patted sweet potatoes, garlic salt, rosemary, and avocado oil. Massage the sweet potatoes so that they are all covered in the herbs and seasoning.
•Cook fries at 400° for 25-35 minutes.
Plate the dish by first putting a portobello cap upside down. Then, place a lamb burger on it. Top it off with some guac (yum!) and put some crispy paleo fries on the side.
