Didn't come out exactly how I wanted and looks ugly as hell, but tastes pretty good. My bf says it doesn't taste like artificial sweetener.
The sweetener is a mix of monkfruit and erythritol.

I tried my hand at something new today! It's a "lasagna" made with yuca (cassava). Omg! It's delicious! One of my aunts used to make it for us and I never got the recipe so just kinda winged it! But yummm! It's bomb.com! We Dominicans call it pastelon de yuca.

👩🏻🍳Simple one-pan dinner! Put a pint of cherry tomatoes and 16oz green beans in the bottom of a greased baking dish. Lay chicken thighs across the top. Drizzle with olive oil and pour 3/4 cup red wine over everything and sprinkle with salt and pepper. If you have extra time, add chopped onion and garlic. Bake covered at 400 for about 45 minutes, then remove cover and cook for 5-10 more minutes. The alcohol in the wine will cook off and leave a delicious, deep flavor. Enjoy! 🍽❤
