I've been looking forward to going to the beach & soaking up some vitamin D ALL WEEK & was super excited when I heard it was going to be 29 & sunny today ☀️☺️ ... until of course I woke up & noticed that the wind was already blowing at full force & it continued doing so for the remainder of the day. AWESOME! 👏🏽🙄 At least I got my meal prep out of the way early, though. 😉 .
The last few weeks have been so busy that I haven't had much time or inspiration to think about my recipes for the week, let alone do my usual 2+ hour meal preps, so I've been sticking to more simpler preps. I whipped up this veggie salad in about 10 minutes. I just lightly pan fried some mixed organic vegetables - beetroot, carrot, cabbage + kale that I bought pre mixed from the grocery store, mixed it with organic spinach, added 1/2 avo, zucchini ribbons + topped it with mixed herbs, sesame seeds, activated buckinis + teriyaki coconut aminos. Easy peasy, lemon squeezy! 🍋👌🏽
